Flan (Caramel)

14 Oz Condensed milk
350 ml Evaporated milk
1 cup of milk
2/3rd cup of sugar
4-5 eggs

1. Add condensed milk, evaporated milk, milk, 4 eggs in a mixie and grind them properly to mix well (approx 60 sec)
2. Add sugar in a flat pan and heat it.When it starts liquefying, lift the pan 2 inches above the stove and start mixing. Do it until its brown and everything is liquefied. Transfer this into the baking bowl and spread evenly. Do all of this when the liquid is hot. This way, you don't have to spread it with spoon.
3. Pour the mixture from step1 into the baking bowl.
4. Preheat oven to 350 F. Heat it for 1 hr to 1 hr 20 min or until it slightly hard (like curd).
5. Take out, turn it up side down into another bowl, freeze it. Serve it.

Green Chutney

Used in Sandwich, Pakodi, Kababs etc

1 cup of mint leaves
2 cups of coriander leaves
1 tbl spoon of cumin seeds
Roasted bengal gram (vepina chenaga pappu)
Ginger
Lemon juice
Green chillis (2 or more as per requirement)
Salt to taste

Take all the ingredients and grind them in a mixie. Add water per requirement until it creates a uniform paste.

Tips: 1. Lemon juice gives green color more shine and brightness
        2. Roasted bengal gram keeps the paste together.
        3. Do not heat and re-freeze the paste. Take as much as you want and finish it.
