Spinach Rice

Ginger, Garlic and Green chills paste - 2 tbsp
Mint and Cilantro - according to your taste(Chopped both of them)
curry leaves - 5 to 6 leaves
Whole spice(cloves-6, cinnamon - 2 small pieces, Bay leaves - 2)
Carrot - 1 (grated)
Onion - 1 small onion(sliced)
Cumin seeds - 1tbsp
Ghee - 2tbsp (if want more you can add more according to your taste)
Oil - 2 tbsp
Spinach - chopped ( added how much you want. I added around 4 cups of spinach)
Rice - 3 cups( I used basmathi rice. washed and leave it beside for 1/2 hour)
salt - according to your taste
turmeric - 1 pinch

Put the pan on stove and add oil and add cumin seeds. Once the seeds splattered add whole spices. once they fried add sliced onion. We need to fry the onions until its brown. Add Ginger, Garlic and Green chills paste and fry it until the raw smell gone. Add the grated carrot and fry it for one minute. Add chopped spinach and turmeric and fry for 5 minutes. Add the washed rice,add 4 1/2 cups of water, mint and cilantro. At last add salt and taste the water. I kept the whole thing in electric rice cooker.  Once its cooked add ghee and serve it.

It is good for kids who don't like leafy vegetable like spinach.

Sambar

Ingredients:

Toor Dal : 1 cup
Tomatoes : 1
Radish : 1
Egg Plant: 3 to 4(if small)
Lady's finger - 4
Drum sticks : 6(Small pieces)
Squash : 1 cup
Sambar powder : 2 Tbsp
Curry leaves - 7 to 8
Turmeric powder - pinch
Tamarind - lemon size
Tadaka - (Mustard seeds - 1tbsp, Cumin seeds - 1tbsp, Redchillies - 2, garlic - 4 to 5 cloves, Hing powder - pinch and oil)
Cilantro - 1 small cup (chopped)
Fresh grated coconut - 1 small cup( grated or slices)

Procedure:

  • Pressure the dal until it gets smooth texture.
  • Cut all the vegetables, set them aside.
  • Boil the water in deep bottomed pan. Once it is boiled add the cut vegetables and  1 tbsp of salt.
  • Once the vegetables are boiled add tamarind juice in it.
  • Next add the dal, turmeric, grated coconut and mix well. Let it boil for some time.
  •  Add sambar powder, chilli powder and salt according to your taste.
  • Take another small pan for tadka. Make tadka and add it to boiling liquid. At the end add cilantro in it.
  • Hot hot sambar is ready to serve. Enjoy!!!!

Sweet Potato Halwa

Mashed sweet potato - 1 Cup (One and half potato)
Sugar -1/2 Cup
Milk - 1 Cup
Nuts - crushed in to small pieces
Ghee - 4 tbsp

Microwave sweet potato for 10 min in some water and mash it.
Heat the pan, add ghee and nuts to the pan. Once they roasted add Mashed sweet potato and fry it in the ghee. Once it is fried add milk. Let them cook together for few minutes add sugar and cook for a while. Now you can serve sweet yummy halwa.

Omlette with stuffing

Add some oil, onions and fry until they are transparant
Add salt
Add green chillis, carrot, capsicum
Fry for some time and take the curry aside
Beat the eggs and add some salt
Make omlette roasting on both sides
Add half cheese slice (optional)
Put the curry on the omlette and fold it. 
Add crushed pepper on the top (optional)
Let it set for 30 secs and omlette is ready.

Kobbari pulusu

Grated coconut 1 cup, Sesame seeds 1/4th of cup, and 3-4 spoons of water soaked rice.
Grind them make a paste by adding water. It does not matter how think it is.
Take 50g tamarind and make juice out of it.
Take pan and Add oil, chana dal, urad dal, cumin seeds, mustard seeds, 2 red chillis and stir for a bit.
Add curry leaves, garlic, 2-3 green chillis.
Add 1.5 cup of cut onions and fry until light brown
Add salt to taste
Add tamarind juice .and some turmeric powder. Cook it for couple of minutes
Add coconut paste slowly mixing all the way through. Make sure there are no lumps.
Add water slowly to get the thickness deserved.
Cook for some time and add coriander leaves in the end.

Mulankada Rasam

Soak small cup rice in water for 10 min
Add drumsticks to water/ganji and boil them for 15 min
Roast sesame seeds
Grind sesame seeds, rice, 2-3 green chillis, Fresh Coconut pieces or dry grated coconut. Make it a thick paste
Add salt to drumstick water
Add this paste to drumstick water
Keep stirring for some time until it thickens a bit.
Prepare tadka separately and add. (Mustard, cumin, garlic, curry leaves)

Cabbage pachadi


cabbage ni cut chesi pan lo vesi let it cook
it needs to loose all that smell
then once cooked.. add 1 tomato and let it cook too
now add garlic and cashews to it
and little tamarind
make sure garlic is moderarely cooked
also red chillies...
once it cools
put it in the mixie and grin it
but dont make a fine paste,
 it needs to be moderately fine
and then temper it with oil, chanadal, cumin, mustard and crry leaves, turmeric
done

Carrot, Beans, Alu curry

Add oil with cumin seeds and mustard seeds
Add all vegetables at a time
   Add 2-3 big carrots cut into small block
   Add 1 big potato cut into small block
   Add Bunch (25 approx) beans cut to small pieces
Cook for 5-7 min mixing them in between
Add 1 spoon cumin powder
Add 1 spoon coriander powder
Add 1 spoon turmeric
Small cup of green peas
Add salt to taste
Cook for 2-3 min

Egg curry: Dhaba style

Boil eggs and fry the whole eggs separately

Add oil with cumin seeds and mustard seeds
Add Big Onion paste. Fry until its little brown
Add big tomato paste. Cook for 5-7 min
Add 2 spoons of cumin powder
Add 2 spoons of coriander powder
Add 1 spoon of turmeric
Add 1-2 spoons of Masala powder
Add salt to taste
Add eggs to the mixture and cook for couple of min
Add 1 cup (or more) water to make it more gravy
