Kakarakayalu (bitter melon) - 6 small to medium
Onion - 1 med size
Cumin seeds
Hing powder
Turmeric
Besan - 4 tea spoons
Ginger galic paste
Chilli powder
Aamchur poweder - 3 spoons (optional)
Sugar
Cut the bitter melon along the long side. Cut only on one side so that the melon and still as a whole. And remove all the center part (seeds) of the bitter melon.
Take the whole melons (with center removed) and cook them in a bowl with just half cup of water. Just to cook them slightly before you fry them.
Chop the center pieces and set aside.
Now take the whole bitter melon
Add 4 tea spoons of oil
Add cumin seeds
Add onions - fry until they are light golden brown
Add Salt
Add Hing poweder
Add turmeric
Add besan
Add chilli poweder
Add the chopped center pieces of melon
Add aamchur poweder (optional)
Sprinkle little bit of sugar over the top
Stuffing paste is prepared. Now take the bitter melons and stuff the half boiled bitter melons. Tie the bitter melons with thread so that the bitter melons will not break and the stuff comes out.
Add 4 tea spoons of oil and add the stuffed bitter melons. On medium flame, fry them until they are brown on all sides. Make sure you turn the melons to other sides so that all the sides are equally fried.
